Tomato and Basil Scrambled Eggs

Oh my, the finals are here and the first exam is tomorrow. That means I have to go to the city to get some pens and chocolate, but going with an empty tummy is not an option so that's why I made an especially yummy breakfast today.

On usual school mornings I don't have time to actually cook something for breakfast, so I usually end up having cereal, quick porridge or toast with something.
Today I had the chance to make a wonderful meal for myself and I wanted to have something with egg so my final decision was tomato and basil scrambled eggs.


I used:

  • 2 eggs
  • 3 slices of tomato
  • 4-5 leaves of basil

I finely diced the tomato and chopped the basil leaves.

I cracked the eggs in a mug and poured them on the pan drizzled with olive oil. I spread the tomato and basil on the egg, added some salt and pepper and then started to fold it and stir it while cutting it into smaller pieces with the edge of my spatula.

When it's in small enough pieces it's your own call if you're going to take it off or let it get a bit crispier. I like mine crispier so I let it be for a bit longer.


There you go! For an extra I decided to slice up the rest of the tomato, and some bellpepper and as the pan was still hot I toasted two slices of bread on it as well. But it's everyone's own decision what to pair it with.

Absolutely delicious and really easy to make. Fills the stomach well and is so much better than just a bowl of cereal.
